You'll be fine Cathy. If you get really waxy potatoes you can literally cut them up (just like roasties) and half some lemons and bung them all in a tray and stick them in the oven for about an hour. A drizzle of olive oil is good but you can do them without if you want to be really healthy! John of course is the expert so I'll ask how he does them.

Preparation

Preparation

I don't think venos comes on the forum anymore, but for anyone interested, the roast potatoes with fresh rosemary he/she posted are fab. I made them last night when we had guests and everyone liked them. It's amazing how something so simple can taste so good. 250°C, if I am reading venus correctly, is gas mark 9, the potatoes would be burnt in 10 mins. I cooked them for about 1½ hours but on gas mark 5 - 190°C. I will definitely make them again. ;D
