This is the recipe she gave me, it is for Ravonini cake, the method was similar to a Victoria sponge, but of course it had extra ingredients added and then a syrup to go on top. RAVONINI CAKE 50ml of water 160gm plain flour 320gm semolina 3 tsp vanilla essence powder(not sure I have seen this in the UK) 7 eggs 320gm sugar 250 full fat yoghurt 1tsp bicarbonate of soda 150gm finely chopped almonds Mix flour, semolina & vanilla powder in a bowl. Take a second bowl and mix 2 of the eggs with sugar and whisk for 3 mins. Add remaining eggs and whisk, one at a time until a fluffy consistency. Take a third bowl and mix yoghurt water & bicarb, then slowly combine the egg and yoghurt mixture. Add the flour slowly, folding it in. Grease a 30cm tin and add the mixture, sprinkle with the almonds and bake for 20 to 30 ins at 180C. Once cake has cooled, pour on the syrup. SYRUP 700ml water 600gm sugar juice of ½ a lemon ½ teaspoon of mastic gum (I haven't noticed that in the UK either, perhaps gelatine might do instead) Heat in a covered saucepan for 20 mins until reduced.

We've watched her doing apple cake or apple pie in the past, and also baklava.
